This mill uses "Stainless Steel 420 Conical Burrs" with the following characteristics:

DAIYA has been making planes used by carpenters since 1946. As the value of Japanese cuisine was being reconsidered, the desire to create something useful for people's daily lives led to the birth of the katsuobushi (bonito flake) shaver. DAIYA states that besides their mission to deliver better products to customers, they have another mission: to preserve current high-level technology for future generations. To achieve this, they believe that by having people know about, purchase, and use products that employ high technology, the technical skills of manufacturers will improve and be passed down to future generations. To embody their belief that "good products" must be "communicated," DAIYA leveraged their specialty in solid wood craftsmanship to create boxes carved from single pieces of wood, giving birth to the katsuobushi shaver. The seamless wooden box is durable and finished in a simple, new form, and was launched as a brand in 2014.
